spell checking is done by the local application, not by the email service itself. So if you're reading your email via the T-Online.de web service, it's the browsers responsibility, if you're using a local email client like Thunderbird or Outlook, this is where you need to find the spell checker and turn it on there.

If by Telekom Mail you mean webmail, i.e., using email in your browser, I recommend using a good email program instead. Email has been very well standardized for many years. It is therefore not necessary to use a Telekom application. My recommendation would be the free Thunderbird. If you use Telekom's MailApp, my advice is to use the MailApp that comes pre-installed on your smartphone. Samsung Mail and Apple Mail are quite decent apps that are significantly better and more stable than Telekom's app. If your device only has Gmail and you don't want to use it, Fairmail, Bluemail, and Thunderbird are good alternatives.

Outlook is actually quite overloaded with features. I would even advise against using the so called “new Outlook” because it routes all emails via Microsoft servers. This is a security breach. However, you can use any email program for Telekom email. I recommend the cost free Thunderbird.

This may depend on the protocol you use and/or settings for deletion. Normally deleting mails move them to recycle bin. From this you can restore mails. Some email programs allow direct deletion. Check the configuration. With IMAP, synchronization ensures that an email is deleted on all devices / moved to recycle bin. This is not an error but a feature.
The effect of vanished mails may occur if you set the visibility in folder to „unread only“.
